I was doing research on these custom builds and got a lot confusing examples. But further research narrowed me to these conclusions. These are just for custom builds not production builds. So CMIIW on any part.

Cafe Racer - Track based build using a humped single seat.
Brat - A Cafe Racer build using a flat single or tandem seat.
Tracker - Dirt Track based build using a humped single seat.
Street Tracker - A Tracker or Street Scrambler build using street tires.
